1. Preheat oven to 375°F. Line 12-cup muffin pan with paper liners.
  2. In a medium bowl, beat eggs, sugar, oil and vanilla extract until light and fluffy. Combine with 1/4 cup melted chocolate.
  3. In a small bowl, mix flour,tapioca starch, baking powder and salt. Add flour to liquid mixture alternately with milk; beat until well blended.
  4. Spoon batter into muffin cups, filling cups half full.
    Bake in preheated oven 20 minutes. Cool in pan for 5 minutes. Remove from pan and cool completely. Makes 12 cupcakes.
  5. To make frosting : in a medium bowl, beat whipping cream, add melted chocolate and gently mix until blended. Insert cupcake corer, twist and remove cupcake core. Fill cupcake with frosting, replace top of core and frost.
