1. Preheat oven to 325 ° F.
  2. In a medium bowl, mix flour, flaxseed, ground almonds, baking powder, baking soda, and salt.
  3. In a small bowl, beat greek yogurt, sugar, vanilla and 2 eggs until smooth, for about 30 seconds, using electric hand mixer; combine with flour ingredients.
  4. In a large skillet melt butter with canola oil, add apple slices, sprinkle with vanilla and sugar, cook on low for 5-10 minutes, covered.
  5. Grease large muffin-top pan with canola oil.
  6. Pour 1/4 cup of batter per pie into a greased large muffin-top pan. Divide apple mixture into 6 parts. Gently spread the apple slices on top of each pie. Sprinkle with chopped pecans. Bake for 15-20 minutes.
  7. Beat 1 egg with 1 tablespoon of sugar for egg wash.
  8. Take muffins out of the oven; spread egg wash over each pie, using a silicone brush. Return the muffin pies to oven and bake for additional 5 minutes. Makes 6 pies.
